Out in the otherwise sedate streets east of El Retiro, this fine neighbourhood bar is one of the best places in Madrid to try vermut (vermouth), from the top-shelf stuff to the basics on tap for €2 a glass. Great tapas, from pickled olives and the like to empanadas (filled pastries), too. There's an outpost downtown in the Mercado de San Miguel.
