The personal vision of James Beard Award–winning chef Peter Schintler, Marmalade was one of the first restaurants to bring real foodie recognition to Old San Juan. The interior is stylishly minimal, while the menu takes full advantage of top-notch local produce – yellowtail, pork belly, avocados – to create delicious food art. The wine list is equally impressive.

The cocktail many will remember (or try to) is called 'Global Warming' and is an experience in changing tastes as spice-laden ice cubes melt.
