A lovely building facing the cathedral and the Adriatic, the 18th-century Palazzo Filisio houses this charmingly understated grand hotel. Stylish rooms were renovated in 2018 with colours referencing the cobalt Adriatic and the location is superb. The in-house Regia restaurant (meals €60) maintains the upmarket vibe with dishes such as risotto with prawns, asparagus and black truffle.
